Baked apple sweetness

I think I wrote about my baked apples before, but I am writing about them again because I tweaked the recipe a little bit and now, made them into mini apple pies…kind of.

I made these little apple pies last night for a family get-together to celebrate birthdays. I made 30 of them and as far as I could tell, everyone loved them. Each person got to have three of them!

Here is what you do:

Cut about six apples (I have used both McIntosh and Honeycrisp) into little chunks. I keep the skins on, but you can certainly take the skins off if you wish. Spray a 9×13 baking pan with butter-flavored Pam (or whatever brand you have) and then put the apples in the pan. Sprinkle with cinnamon. Not sure how much, but just use your judgement. Then, pour one cup of sugar-free maple syrup over the whole thing. I use the Great Value brand from WalMart, it is my favorite. Stir a bit before putting it in the oven. Bake at 400º for about 25 minutes or so. I usually stir it about half-way through.

Next, you will need won ton wrappers (I use the Nasoya brand). They come in packages of 80 or something like that. I used a 12-cup cupcake pan and a 6-cup cupcake pan. Spray with the butter-flavored Pam and then, put a won ton wrapper in each cupcake holder. You have to gently push them down in the pan so that they make like a little cup. Once you have them in the pan, lightly spray again. Bake these until they are golden brown, about 8-10 minutes. I usually bake them at the same time as the apples. You will need to make 30 of them.

After the apples have baked and the won ton cups, or as I call them, tartlets, are ready, put them on a plate and scoop some of the apple mixture into each of the cups. I like to put a small dollop of fat-free Cool Whip on each apple tartlet. After they have cooled a bit, they are ready to eat. We just pick them up and eat them, but make sure you do so over your plate. They are a bit messy, but oh-so-good!

Three apple tartlets only has two Weight Watchers points. If you top each one with a tablespoon of the fat-free Cool Whip it adds a half a point total. If you only use a teaspoon worth of the fat-free Cool Whip on each of them, it doesn’t add any more points. I usually use a tablespoon’s worth on each tartlet because I am Cool Whip fanatic.

They are such a delicious, sweet AND healthy dessert. And they are so darn cute. Sorry, I forgot to take a picture of them, but next time I make them, I will make sure to do that. Good luck and enjoy!
