Thank goodness the weekend is done. I made it through Sunday, the big game day, but I could have done better.
For lunch, I did well, although I felt kind of snooty or weird, I guess. I made a terrific salad with lettuce, good-for-me cheese, craisins, a good-for-me raspberry vinaigrette and pears that I tossed around in a pan with butter-flavored cooking spray until they were a golden brown color. It was delicious. Everyone else ate pizza…it smelled really yummy. I opted out of the pizza because it was really greasy and cheesy. I opted for the salad because I was saving my calories for our snacks and for my husband’s chicken chili!
At about 3 o’clock, we decided it was snack time. Now keep in mind there were only four of us. Out came the chips and salsa, crackers, two kinds of cheese and summer sausage, some good dip (I made it so it was pretty healthy), pita chips, two creamy (fattening) dips and French bread. Way too much for only the four of us. I ate mostly the dip I made (recipe below) and pita chips (Stacy’s plain pita chips – they’re semi healthy). However, I did eat quite a few slices of summer sausage with some Jarlsberg cheese and really good crackers. Way too many, actually. But God, they were so good.
At supper, I only had one small bowl of chili and it was tasty. I had a really bad sweet tooth craving after that, but instead of eating any sweet treats, I chewed on some gum instead, which surprisingly was really satisfying.
Up next on the food event calendar will be Easter. Thank goodness I am too old for an Easter basket!
Here is the recipe for the dip I made:
1 can of Great Northern beans (juice and all)
2 tsp. lemon juice
Put this into a food processor and process for about 30-60 seconds. Then add the following remaining ingredients:
6 oz. Feta cheese (Use the fat-free stuff)
1 jar (7 ounces) of sun-dried tomatoes – use only the tomatoes, dump out the oil. (I used the Alessi brand)
1 tsp. chopped rosemary leaves
1 tsp. black pepper
Blend all of the ingredients in the food processor for about one minute. The dip will be quite thick. I dip the pita chips in it and it tastes great!
